Can anyone tell me what the stock Miata thermostat comes set? What temp.? Is it better to change that thermostat to a lower number?

OEM is 180F or 195F.
In your climate, I would say 195F would be fine.

OEM is 195. Aftermarket is 160 or 180.

I put in a 180 which keeps it just over 180 unless in stop and go when it is hot, then the fans kick in at 210 +/- to keep it at 210 +/-. I was hoping it would help if I ever do any more track days, but if just doing autocross or street, I don't think it would be that much of a help considering engines want to be around 200 or so I've read. (All this considering you aren't in Arizona).
In Phoenix and probably where I am, it probably helps to get a head start. When I moved here to South Texas in the first part of August it was 104 or more for 2 months. Bothered me more than the car. Now it is only in the 80s.
